Food scientists at Abertay Uni are looking to cut down on pumpkin waste by turning leftovers into ice cream.
Around eight million edible pumpkins are binned in the UK every Halloween.
Lecturer John Wilkin is the person behind the recipe.
"I'd like to think we've set the challenge for everyone to eat the pumpkin rather than just put it on display." he said
"Whatever you do with it, don't just chuck it out. It's a perfectly good food product to eat."
The recipe is seen as a healthy alternative to regular ice cream.
"Normal ice creams are about 21% sugar, this one is only 2%," added Mr Wilkin.
"We've used a natural sweetener called erythritol. That seems to be a really good substitute for sugar."
