It's Foodie Friday! I have a real passion for food, and having owned quite a few restaurants over the years I've picked up some great cooking tips.

Nick's Patatas Bravas

Ingredients

  • 300g McCain frozen crispy bites
  • 1 tbsp extra virgin olive oil
  • 2 fat cloves garlic, peeled (or 3 smaller ones)
  • 2 heaped tbsp mayonnaise
  • 1 tbsp white wine vinegar
  • 2 heaped tbsp hot smoked paprika
  • Sea salt flakes

Method

  • Preheat the oven to gas mark 8, 230°C
  • Toss the frozen crispy bites in the olive oil
  • Place the oiled bites on a baking tray
  • Bake on a high shelf in the oven for 25-30 minutes, or until very crisp
  • Crush the garlic and 1/2 tsp salt flakes to a paste in a pestle and mortar
  • Mix it with the mayonnaise, wine vinegar and paprika
  • When the potatoes are cooked, remove them to a cold serving plate
  • Let them cool (so they are warm rather than hot)
  • Spoon the sauce here and there over them
  • Serve with other tapas or as a side dish to a main course
