It's Foodie Friday! I have a real passion for food, and having owned quite a few restaurants over the years I've picked up some great cooking tips.
Over the next few weeks we'll be giving you some quick and easy ways to make the food you cook every day at home even tastier.

David Moore
David Moore has been a prominent figure in the food industry since starting his career at The Box Tree, Ilkley over 30 years ago. He followed The Box Tree with a 6 year stint at Le Manoir aux Quat Saison in Oxford with Raymond Blanc, before founding Pied à Terre in 1991. L’Autre Pied followed in 2007 and a pop-up, Pieds Nus, in 2013.
Ingredients
The burger mix…
This is the most important part for flavour! Ask your butcher for the following mix:
- 35% rump steak
- 35% chuck
- 30% fat
Nick's burger sauce…
This is top secret. Tell no-one.
- 1/2 cup of mayo
- 2 tbsp French dressing
- 4 tsp sweet pickle relish
- 1 tbsp finely minced white onion
- 1 tsp white vinegar
- 1/8 tsp salt
Combine all the ingredients in a small bowl and stir well. Place the sauce in a covered container and refrigerate for several hours.
And the rest…
- Brioche bun
- Buffalo tomatoes
- Iceberg lettuce
- Red onion
- Cheese of your choice
Method
- Fire up the BBQ / Grill
- Chop the tomatoes, lettuce and onion
- Using your hands, shape the burger mix into equal sized patties
- Place the burgers on the barbecue for 8-10 minutes, flipping once. (If using the grill, cook for 15 minutes, flipping once)
- Lightly toast the brioche buns
- Season the burgers with salt
- Melt cheese slice on burger
- Build the burger with the bun, tomato, lettuce and onion. Don't forget the burger sauce!
- You are a burger hero! Bathe in the glory.
