Welcome to our first Foodie Friday! I have a real passion for food, and having owned quite a few restaurants over the years I've picked up some great cooking tips.

David Moore
David Moore has been a prominent figure in the food industry since starting his career at The Box Tree, Ilkley over 30 years ago. He followed The Box Tree with a 6 year stint at Le Manoir aux Quat Saison in Oxford with Raymond Blanc, before founding Pied à Terre in 1991. Ingredients
- 3 eggs
- Olive oil
- 2 gloves of garlic
- Mushrooms
- Parmesan cheese
- Chives
- Salt and pepper
Method
- Fry butter in a pan, adding some crushed garlic
- Fry the mushrooms in the garlic butter, and set aside
- Crack 3 eggs into a bowl
- Whisk the eggs. To get a marbling effect, don’t beat them too much
- Add a little olive oil into a very hot pan, and pour in the mixture
- Break up the egg a little in the pan with a fork
- After no more than 3 minutes in the pan, place the mushrooms onto the omelette
- Grate parmesan on top and fold the omelette in half
- Add chives and serve!
