Welcome to our first Foodie Friday! I have a real passion for food, and having owned quite a few restaurants over the years I've picked up some great cooking tips.

Over the next few weeks we'll be giving you some quick and easy ways to make the food you cook every day at home even tastier.

David Moore

David Moore has been a prominent figure in the food industry since starting his career at The Box Tree, Ilkley over 30 years ago. He followed The Box Tree with a 6 year stint at Le Manoir aux Quat Saison in Oxford with Raymond Blanc, before founding Pied à Terre in 1991. L’Autre Pied followed in 2007 and a pop-up, Pieds Nus, in 2013.

For the steak...

Ingredients

  • Rump steak
  • Olive oil
  • Salt and pepper

Method

  • Get the rump steak out of the fridge an hour before you cook it
  • Season with olive oil and salt and pepper, just before you cook it
  • Place it into a REALLY HOT PAN! Just be careful!
  • Rump steak is best cooked medium – 2.5 minutes either side
  • Rest for at least as long as you cooked it… 6-7 minutes. Cover with tin foil and a tea towel to retain heat.

For the Heirloom Tomato salad...

Ingredients

  • 3-4 ripe heritage/heirloom tomatoes
  • 2 shallots or 1 banana shallot
  • Spring onions
  • Olive oil
  • Lemon
  • White vinegar
  • Fresh basil
  • Pack of Ryvita

Method

  • Roughly chop tomatoes and arrange in a dish
  • Finely chop the shallots and add to the tomatoes
  • Season with salt and pepper
  • Grate zest of half lemon
  • Juice of half lemon
  • Chop several spring onions (entirely)
  • Tear some basil leaves and add to salad with spring onions
  • And for a bit of crunch – break up some Ryvita crackers and sprinkle on top
  • Finally, pour a generous amount of olive oil over the salad and serve!
