Plans progressing for new sustainable Whiskey Distillery on Wiltshire estate

They're now looking for the community to get involved

Being a sustainable business and using local ingredients is one of the main goals of a planned new distillery in our county.

The Wiltshire Whiskey Distillery Co. have been given approval by Lord Margadale of the Fonthill Estate to proceed with the new development on site.

It will use all local products, including spring water which has been filtered through limestone rock beneath the estate and the barley grown in the chalky soil within its farmlands.

The idea has come from co-founders Alistair Munro, Eddie Large and Jon Carson who are currently in the process of getting all the permissions for it while planning goes ahead too.

CEO, Alistair Munro, says:

"It is a dream realised to be building our distillery within such a culturally significant estate as Fonthill. Not only does it provide a rich backdrop for the development of our uniquely British brand, it also enables us to achieve our ambition of creating a highly-sustainable, single-estate offering. We will assess every business, brewing and distilling decision in terms of environmental impact, local provenance and sustainability. The distillery intends to be carbon neutral from the start and, very soon thereafter, carbon negative, making the market’s ambitions for tomorrow The Wiltshire Whisky Distillery Co.'s goals for today."

They want to produce single malt, single grain and blended single-estate whiskies, alongside a range of botanical spirits and gins, but before that they're looking for some local people to get involved.

They say that because they are literally home grown, they want a number of local investors to make it even more of a community project.

"The distillery will be joining the brewery at the heart of the Fonthill Estate near Tisbury and we've been part of that local community for the last fifteen years and this is just going to bring more opportunities, a few highly skilled jobs but we will also be welcoming the whole community to come and see us and it's a community focus thing, we have big ambitions but we're based and we're centred in South West Wiltshire.

Fonthill sits in the heart of the premium barley growing and malting region of England. The matching of the Fonthill water, the grains, the yeast and our fermenting process, combined with the unique Fonthill terroir, will allow us to produce the highest quality beer wash to feed our copper stills. The synergy in the crafts of brewing and premium whisky distillation will sit perfectly together in our distillery."

The company is looking to fundraise £3 million and hope to start distillation at the end of this year and release the first spirits at the beginning of 2022.
