Top UK chef seeks Cornish apprentices with appetite for success
Paul Ainsworth is looking for eight candidates through Truro and Penwith College's training programme
Padstow-based Chef, Paul Ainsworth is on the hunt for eight new Apprentices with an appetite for success to join his collection of award-winning Cornish restaurants, including Paul Ainsworth At No6, The Mariners Public House and Caffè Rojano.
Truro and Penwith College have been running a successful Apprenticeship training programme in partnership with the Michelin Star chef and restaurateur since 2018.
All graduates to date who have completed their training through the ‘Paul Ainsworth Truro and Penwith College Academy’ have achieved the top Distinction grade and been offered permanent employment across ‘The Ainsworth Collection’.
The new Apprenticeship positions will start in January 2021 and include entry-level roles for Commis Chef and Hospitality Team Member Apprentices. No previous experience is required, and applications are open to anyone over the age of 16 with no upper age limit. The closing date is 31 December.
Training under one of the UK’s top chefs, who regularly appears on some of the nation’s favourite cookery shows, has provided once-in-a-lifetime opportunities for previous Apprentices and kickstarted their careers.
Olivia Carthew from Bodmin, joined the Academy as a Hospitality Team Member Apprentice in 2018 when she was just 17. The following year she flew to Saudi Arabia to work at ‘A Taste of the World’, a six-day gastronomic celebration for food lovers.
In addition to this experience, Olivia achieved a Distinction in her Apprenticeship and at 19-years-old has gained full-time employment, been promoted to ‘restaurant curator’. She is now running her own front of house section at Paul’s Michelin-starred restaurant in Padstow, ‘Paul Ainsworth at No6’.
“I am so grateful for all of the opportunities I was given during my Apprenticeship. I can’t thank Paul and my line manager Chelsea Roper enough, along with my tutors and training advisors at College who were very supportive and visited me at work regularly.
"Being offered a permanent position was amazing and when Paul and Chelsea asked me to run my own section it was a dream come true. I can’t recommend the Apprenticeship programme enough; it’s the best start you can get for a career in hospitality”.
“It’s been amazing to watch how our Apprentices grow and develop during their Apprenticeship journey with us, and we are so proud that they have all achieved Distinctions. We can’t wait to offer more incredible opportunities like this to our next group of Apprentices in January.

“I decided to work with Truro and Penwith College because I loved what I saw. The facilities are phenomenal, and the tutors have the same energy and goals as I have, to do our bit for our industry and make a difference.
“I’m urging anyone who really wants to work in hospitality at a high level to apply. It’s a great feeling to go home at the end of the day thinking ‘wow I was a part of something special today”.

“The College is thrilled to continue working in partnership with Paul and his team to offer our Apprentices this level of opportunity at the start of their career.
“The partnership also benefits learners across College with opportunities to attend masterclasses and learn from Paul’s team. It’s fantastic to be working with an organisation that shares our passion for developing skills for the industry”.
